Red Tomato Chutney

This is not my recipe but i found it after an internet was one of the easiest and with very few ingredients..its from by hippychick.

It makes 6 small jars or 2 big ones.
6lb tomatoes, can remove the skin if you want..i didn't and it tastes just as good.
1 large onion chopped
12oz caster sugar
1/2 oz salt
1 tsp mild paprika
1 tsp pickling spices
1 pinch of cayenne pepper..i didn't have any of this so used black pepper
1/2 pint of vinegar..i used white as it was all i had.

Prep time 30 mins/cook 3 hours..but mine took less than that..about 2 over a low heat.

Cook the tomatoes and onion together until a nice thick pulp.
Add all the other ingredients and cook until a nice thick consistency..
Pre heat your jars in the oven..then just fill your jars with chutney whilst hot then seal straight away.
This  gets better with age but can be eaten when cooled down if you can't wait.
