Kellie just for you..

As i was asked nicely by Kellie for this recipe here it is...

Upside-down Peach/Pear Butterscotch Pudding.
40g butter/margerine
50g soft brown sugar
1 tin of Peaches or Pears drained
Victoria sponge mix for the topping.
Melt the margerine/butter in a pan and add the sugar..stir until nice and smooth.
Arrange the fruit on the bottom of baking tin and pour over the Butterscotch mix..
Cover with Victoria Sponge mix..
Bake for 30 minutes at Gas mark 4 for 30 minutes..
